Yummy Recipe!

We did not have a good night last night! Somebody kept waking up every 2 hours. I am so exhausted today. We just got back from swinging. It's the only way I can think of to keep her calm.



Recipe Time!
My neighbor gave this recipe to me. I think she got it from a magazine, but I'm not sure which one. Doesn't matter, point is, I didn't invent it and I love it. 

I don't know what it is called...Something Something with Tomoatoes

Ingredients:
2 lbs of Swiss Chard, stems discarded and leaves cut in 2 in strips
1/4 c evoo (olive oil)
3 cloves of garlic
1/4 tsp crushed red pepper
1 can diced tomatoes
1 can cannellini beans drained and rinsed
1/2 tsp salt
1/4 tsp pepper

I don't use Swiss Chard. I use Kale, and I don't measure the red pepper because I like to do it by taste. (I like things spicy) I also like garlic..a lot, so I put whatever my heart desires, and salt and pepper to taste.

1) Boil the green stuff, then drain. I put my kale to the side while i do the next steps, but the recipe doesn't say to do so right away. It kinda tells you at the end of the recipe that you should of had it set aside.

2) Heat oil (in same sauce pan) and cook garlic and red pepper until garlic is golden. 

3) Add tomatoes and bring to a boil. Add beans and simmer at high heat for about 3 min.

4) Put the green stuff back in the pot and and simmer for a few min then add salt and pepper.

About Me

Interesting fact I read today:
"An airplane mechanic invented the Slinky while he was playing with engine parts and realized the possible secondary use for the springs"...Neat. 

I'm sitting here just after putting my daughter to sleep listening to "Somewhere Over The Rainbow" sung by Judy Garland. Before I started playing the song on my phone, I sang it. There are only a few songs I can sing to her that she will fall asleep to. And I have to sing to her. Top two: Amazing Grace & Somewhere Over The Rainbow.



I'll begin by telling a little about myself!
10 bits of info about me:

1) I like to craft and I am always looking for new ideas! I have a problem, though. I'm bad at staying on track with any project at one time. For example, I am trying to finish this cross stitch for my husband (it was supposed to be his anniversary present last month) and a latch hook my mom bought for me a few years ago.

2) I have a Russian Tortoise for a pet and love her! She has a personality, that's for sure! More about some other time...


3) I love trying recipes out. Whatever I can get my hands on, I wanna try and make it! I hope to share some fun recipes on here. 


4)I'm really good at making scrapbook books and diaper cakes, and a few people think I could actually make good money from selling them, but I just don't know how, so I don't. 

This is not my favorite one, but it's the only one I have a picture of.


5) I can't stand to walk barefoot on dirty floors or in hotel rooms. I can do it if I'm outside, but that's about it. Sometimes, I have to wear something in my own house. It drives me nuts to have dirty feet! It makes me more crazy to put those dirty feet in clean shoes.


6) I LOVE Joss Whedon. Buffy is my all time favorite, but Firefly and Angel are really good, too. Especially Dr. Horrible's Sing-A-Long Blog! Love...

7) My husband and I love getting together with people and playing 42 (a domino game) or other board games.


8) I Love to swim. I swam most of my life and it's the only workout that I love to do. I do other things like a few beachbody programs, but swimming doesn't hurt my body like anything else would. 


9) I love painting my nails with crazy colors or neat simple designs.

I heart my home state. I did this for Texas Independence Day.

10) It may sound cliche, but I really do LOVE spending time with my baby girl. The best moments I have are with her. I love snuggling and giving her all my love. Since the moment I became a mommy, I began to have such scary thoughts about how she could get hurt etc, etc. I love her too much, and I love that I love her too much. <3
